Here's to Week 9 of
Cooper's Covid-19 coping....
Lots of cooking....
I wanted to try out a meal delivery service.
Wow, there is a lot of them out there to
choose from. I finally decided on
Hello Fresh.
Kate cooked her little heart out
with a little help from me,
Emmsie and Brie.
Our first meal was a meatloaf
dish called Meatloaf a la Mom.
We love meatloaf!...
is that weird?
definitely choose this one again.
Altho I'm not a huge fan of
fresh string beans. Like I'll
eat them.. cuz I'll eat anything,
but I prefer canned beans
over the fresh. A bit odd of me,
I think.
Meal 2
were meatless Salsa Verde Enchiladas.
Lots of prep with all the chopping...
It was good, but a bit too spicy for our tastes.
We like our honey chicken
enchiladas waaaay better.
Would not get this one again.
Meal 3
Gouda Pork Burgers
They were a win win.
The caramelized onions...dreamy!All of us LOVE onions, except for
the hubs and Hannah. They can
handle the taste, not the texture.
The rest of us just don't understand.
LOL
They totally make a
burger!
So far I'm a fan of this meal delivery gig.
I like how you can cancel or pause your weekly
order anytime. I might just do the latter to try
out another company for a couple weeks
to see which one we like better.
Some of the prep and recipe instructions
with Hello Fresh were a little heavy.
I'd like to simplify the process even more
cuz you know me and food prep.
YUCK!
For the most part Kate didn't have
a problem with it.
Thank goodness cuz she's our head chef
around here these days.
She loves to cook like her dad and Emmsie.
Bless them.
I'd rather be on clean up duty.

We celebrated Emmsie this week
as our spotlight.
The Kahoot! quiz she created about
herself was delightful to play.
Kyleigh ended up winning
which made us laugh,
cuz they understand each other
probably the least.
Complete opposites those two.
How they managed to share a room
for YEARS and YEARS
and hardly fight is pretty commendable.
For her favorite treat Emma
of course wanted ice-cream!
We tried a place in Sandy called
Handel's.
This place is a keeper!
We are super impressed with their ice cream
and all their fun flavors.
My favorite was the cinnamon graham.
Emmsie picked First Knightto watch....her all time favorite movie!
It's one of mine too.
Such a good show!
This was our Friday night
take-out as one of Emmsie'sfavorite meals is an
In n Out hamburger. I love
their burgers, but man their
fries need some help.
We ate out on the deck and guessed what
her 10 things she hates that people love list.
1. Citrus
2. Instagram/social media
3. mall/shopping
4. the heat
5. concerts
6. spicy food
7. the zoo
8. Las Vegas
9. sports rivalries
10. caffeine/flavored drinks
{she'd rather have water}
One of Emmsie's favorite activities
is baking.
She tried a new cookie recipe for
brown butter cookies.
The key is browning the butter on the stove.
The smell is heavenly.
They were a hit!

Other things that brought light and joy
to our week!
Our YW virtual Spa night.
The hubs Saturday morning
ride. He LOVES his weekend
mtn bike rides with his buddies.
It's pretty much a Saturday morning
ritual or they will go night riding
with their head lights on.

Hannah had a fun picnic up by
the Draper Temple grounds...

Our city has moved from
orange to yellow
risk mode with Covid
so that's encouraging.
Brie was invited to a "yellow"
celebration...an outdoor party
with some school friends.
Still makes me a tad nervous that people
are willy nilly gathering, but we let her go.
The hubs told her if anyone comes down
sick from the party
she's sleeping in a tent for two weeks
out in the backyard.
She enjoyed seeing her
friends again in the flesh.
More than I think she thought she would.
She's not really a social gathering type gal
or a picture taker... so I have
no pics, and I probably won't
for her entire high school career. haha
Brie had to make a cube
out of paper for some
Biology experiment. So
Kate got creating and
made a paper table
for Bing to eat his food
from. He's treated like a
human around here.

Our Sunday meals togetherare always a highlight. Our love
for food brings this
family together.

Having Brie's AP Human Geography
test finally over with was a relief.
She was so happy to have that behind her.
They won't know how they did for awhile,
but it was open book so we are hoping
for at least a 3 passing!

Kate's school teacher hand delivered
to each student's home their paper
about Springtime that they wrote
before leaving school in March.
Kinda strange to see your school
teacher on your porch, BUT
my gosh... shout out to the fabulous teachers
who have gone the extra mile during this unusual
digital learning time.
Kate and Brie are sooooo ready to be done.
We have only 3 more days of
actual school work left.
Heading into the home stretch.
